This year, we are working with Mr. Rainaldi from Coffee Pundits to help us process our specially designed procesing method.
Taking insirations from some of the most exciting coffee we try from Ethiopia and Panama early this year, we are commision several different process for us from our long-time producing cooperative: KSM Mekarwangi in West Java.
The first process that we release is this coffee. RFF or known as river-flow fermentation natural.
For this coffee, fermentation are happening in a flowing water channel that Mr. Rainaldi build in one of the farms in Mekarwangi. The idea is to use the flowing water to help cooldown the fermentation tempereature to keep the coffee cold and slow down the yeast activity, hoping to get a clean and floral coffee.
We launched this coffee during Jacoweek this year, and some people are surprised by this coffee. It was light, clean, and floral. Especially if you have tasted coffee from Mekarwangi, the flavour spectrums are so different. It's like an elegant version of coffee from Mekarwangi. Ever.
In the cup expect a tea-like body with notes of mandarine, soft red florals and soft stonefruits.
