After years of fine-tuning this process, finally we've reached the desired style and flavour for this coffee.
We call this process DPMR, a short name for the process: Double Phase Mossto Rehydrate Natural.
This Process involves another extra stop of drying the coffee before the process and then rehydrating the coffee cherries with a mossto (a byproduct of coffee fermentation or usually known as coffee cherry juice). This year, we did a slightly different approach, instead of using complete mossto, instead we are using the honey or mucilage from the honey process that is less aggresive during the fermentation.
The result of this coffee is it's producing one of the most exciting texture from our current line-up and completed with bursting fruity flavours.
In the cup expect ntoes of candied cherry, candied grapes, followed by a coffee blossom florals.
