We have been working with George from Inovasi Kopi for some time now, and last year he offered us his volume coffee that also come from the farmers in his village in Pulu-Pulu, Toraja.

What make it difference with his specialty lot is these coffee are processed by the farmers themselves using knowledge and SOP that was developed by George and his team at Inovasi Kopi.

That way, they allow the farmers to earn at a slightly higher rate rather than selling cherries because now they are empowered with the capacity to process their own cherry.

In terms of flavour wise, it surprises us! As it is very clean, and if we cup it blindly we will not know that it is part of our collective project coffee. Although it is not as floral as the specialty lot but this particular washed Toraja is very good. It got crisp acidity, big round body, and very very sweet.

In the cup, expect notes of crisp mandarine orange, dried apricot, and brown sugar.
